I had a colleague bring me this question this morning: "Can you make a course unavailable to students once the course has concluded (including "read-only" format - I don't want them to be able to see the course at all)?"
Actually, you can -- I found this tip in the Canvas Guides (don't ever forget what a great resource they are!!):
To create single spacing in the Rich Content Editor, press the shift+enter (or, if you are on a Mac, hit shift+return). This will create a line break instead of a paragraph break. There are multiple possibilities here that might explain why Canvas would think that you still have assignments that need grading:

It is often useful to be able to take an assessment for a "test run" by switching to the student perspective. In Canvas, that student perspective is only 2 clicks away:
I know, in this day and age, paper is archaic, right? Still, it is sometimes handier to have a paper copy with me in class to answer student questions in person than it is to pull up the course website, then the specific quiz, on the computer.
In Canvas, it's fairly easy to print a quiz, although not exactly obvious: Yes, you can -- if you use the "Settings" link in the upper right corner of the SpeedGrader window, then select "sort by submission status":
